Ingredients
For the potatoes:
1 ½–2 lbs Yukon gold (or honestly any kind of potato works)
2 Tbsp olive oil
Sprinkle of paprika
Sprinkle of garlic powder
Salt & pepper (don’t be shy)
For the beef:
1 lb grass-fed ground beef (Organic or locally sourced is best!)
A drizzle of olive oil
2 cloves garlic, minced
Seasonings: salt, pepper, paprika, garlic powder
A few dashes Worcestershire sauce (this makes it so good)
2-3 slices provolone cheese (my “secret” ingredient, but American works too **this is added in at the end, description below)
For the onions:
½ large yellow or sweet onion
Olive oil + a little butter (the combo makes them extra yummy)
Pinch of salt
A splash of Worcestershire sauce to deglaze the pan
For the sauce:
Ketchup + mayo (equal parts to start)
A spoonful of Greek yogurt or sour cream (adds tartness & creaminess)
2 small pickles, chopped up (love Grillo’s brand)
Dash of pickle juice (trust me)
Salt to taste
For serving:
Chopped romaine lettuce — this makes it feel like a real “bowl”
Directions
1. Crispy potatoes
Preheat your oven to 425°F (220°C). Stick the baking sheet in there while it heats up — this trick gives the potatoes that crispy bottom without sticking. Toss your potato cubes with olive oil, paprika, garlic powder, salt, and pepper. Spread them out on the hot pan, flip halfway, and bake until fork-tender and golden (around 25–30 minutes).
2. Beefy goodness
Heat some olive oil in a skillet, toss in the garlic, then the beef. Season it up with salt, pepper, paprika, and garlic powder. Right before it’s done, add a few dashes of Worcestershire sauce. Then comes the best part: lay slices of provolone cheese on top, cover the pan for a minute, and let it get all melty and gooey.
3. Caramelized onions
Meanwhile, slice up that onion and sauté with olive oil + butter on medium. Sprinkle in some salt and just keep stirring until they’re soft, golden, and caramelized. (Low and slow is the key.) Add a splash of Worcestershire to scrape up all the little browned bits at the bottom — flavor city!
4. Sauce time
Mix together ketchup, mayo, Greek yogurt or sour cream, chopped pickles, and a dash of pickle juice. Taste and adjust — more ketchup if you want it sweeter, more pickles if you like tangy. It’s like a burger sauce, but better.
5. Build your bowl
Start with a bed of chopped romaine, add those crispy potatoes, pile on the cheesy beef, top with caramelized onions, and drizzle generously with your sauce.
Extra ideas: Add a fried egg, some avocado slices, or even a handful of shredded cheese on top if you’re feeling extra.
This may not be “holistic” but my goodness, it’s a great choice for a fun yet nutritious weeknight meal!
